• Brewing: Bring water to a boil (212ºF/100ºC), allow to cool for about 5 minutes to 170-180ºF, then steep for 2-3 minutes

Once a colonial plantation, Potong is now collectively run by its workers, paving a stronger, more democratic path forward for the community. This revolutionary model generates significant improvements for the garden’s 350 workers and their families, and is helping to spark a badly needed transformation of the tea industry. Most teas–even those that are certified as fair trade–come from large plantations where workers have little say and are trapped in a system of dependency. The small farmers who grow our teas control their land and their livelihoods. Together, we’re building an alternative tea model and a farmer-led future for the tea industry.
